Default limits
By default, each instruction is allocated 200,000 CUs and each transaction is allocated 1.4 million CUs.
How to change
You can change defaults by including a SetComputeUnitLimit instruction in your transaction.
Simulate the transaction to estimate required CUs, then add a 10% safety margin.
Priority fee is determined by the requested CU limit, not the actual compute used. Setting the limit too high can make you pay for unused compute units.
